The other night I was wanting to whip up something quick.
You know those nights you’re contemplating having a bag of Skinny Pop and a glass of wine for dinner? Yep. That was me.
Then I remembered the Costco gawds blessed us with this amazing coconut curry sauce.
I sautéed some veggies and garbanzo beans, poured the sauce over it, made a quick pot of quinoa, and BOOM!
A masterpiece that tasted like a meal you’d enjoy by candlelight on an exotic island somewhere.
I think It took 20 mins tops to make aaannnddddd the leftovers were even better the next day! HOW?!!
Okay so here’s what you need:
Maya Kaimal Coconut Curry Indian Simmer Sauce from Costco
Fresh or Frozen Veggies of your choice
Garbanzo beans
Quinoa or Rice
Avocado oil or coconut oil
Salt + Pepper
Directions:
Get your quinoa or rice cooking bc that’s what will take the longest to cook (this meal is that fast to make!)
In a large pan or wok heat a little oil
Add in your veggies, beans, and salt + pepper over medium fire
Once the veggies are about done, add in the whole container of coconut curry
Let simmer for about 5-7 mins
Add some cayenne pepper, fresh peppers or pepper sauce if you like more of a kick.
It's best served over quinoa or rice.
Oh, and I made some edamame for the table as well. So good!
If you've got health/diet restrictions --- this meal is gluten-free, vegetarian, and vegan!
The quinoa, garbanzo beans, and edamame are great sources of protein but you can always make a little chicken, steak or shrimp to serve on the side as well!
Don’t you love a meal the whole fam can enjoy without you having to make multiple dishes!?
Baby can eat it, I can eat it, and with a little meat on the side Hubs would be asking for seconds too! :-)
